Not only are ice pops are easy to make but they are also mouthwatering healthy treats that your whole family will enjoy. I know for a fact that everyone will love these Coconut Ice Pops. Coconut Ice Pops, Cookbook.

The Coconut Ice Pop recipe that I have found in the 150 Best Ice Pop Recipes book is out of this world good. All you need to create your own tropical Coconut Ice pops is some coconut milk, palm sugar and water. Give it a try today and let me know how it goes. Makes about 21⁄4 cups (550 mL) 6 to 9 ice pops 1⁄2 cup, 125 mL palm sugar (see Tips) 3 tbsp, 45 mL water 2 cups, 500 mL coconut milk (see Tips) In a saucepan over medium-low heat, melt sugar in water and stir until smooth. Add coconut milk and increase heat to high. While stirring, bring to a boil. Bring heat to medium-low and simmer for one minute. Let it cool down. Pour in your molds and place in freezer until slushy. Insert sticks and freeze again until solid, for a minimum of 4 hours. Follow the manufacturer’s instructions if you are using an ice pop kit.

Tips

Palm sugar is used extensively in Asian cooking and is generally available at Asian markets. “Coconut sugar,” which is palm sugar made from coconut sap, is sold in granulated form at bulk and natural foods stores. You can substitute an equal quantity of light brown (golden yellow) sugar or raw cane sugar for the palm sugar.     My daughters both make the ice pops here. I will have to try the coconut ones. These look really refreshing! It’s hot here today and I grabbed groceries this morning so I have some store bought ones here. I know the kids will be reaching for those fast when they get in.
