Easy Bread Pudding

Easy Bread Pudding Recipe

When I say easy bread pudding, I really mean easy! This recipe is an old fashion bread pudding with a modern touch. It is my go to breakfast when I am kept awake at night by my kids. It is comforting and everyone in my family enjoys it.

Ingredients

6 to 8 slices of bread in pieces (or any other kind of bread)

2 cups milk

2 to 3 eggs

1 teaspoon vanilla extract

Easy Bread Pudding. Breakfast recipes. The Flying Couponer.

Directions

In a microwavable bowl, combine eggs, milk and vanilla. Beat well until blended. Pour over the bread pieces and push down until the bread is soaked up. I like to use my hands to push down but you can use a fork if you prefer.

Cook in the microwave for 6 to 8 minutes.

 Bon Apétit!

This IS easy! I have it written down and on my microwave now so I can try it first thing in the morning. I get up wa-a-a-ay earlier than my boys, and need some kind of breakfast to push me through until the afternoon. I have some cinnamon-raisin bread that would be perfect for this!!
