Ham and Cheese Egg Puffs.

Ham and Cheese Egg Puffs
Makes 6 servings
Don’t be deceived by the short list of everyday ingredients — these egg puffs are something special.
Tip: It is easier to separate the whites from the yolks while eggs are cold. However, the whites will whip to greater volume if they are not super-cold, so consider letting the egg whites warm for 5 minutes at room temperature before beating.
Preheat oven to 450°F (230°C)
18- by 13-inch (45 by 33 cm) rimmed sheet pan, lined with foil and sprayed with nonstick cooking spray
6 large eggs
1⁄4 tsp, 1 mL freshly ground black pepper
1⁄2 cup, 125 mL grated Parmesan cheese
1⁄3 cup, 75 mL finely chopped cooked ham
1⁄4 cup, 60 mL chopped fresh chives
1- Separate the eggs, placing the whites in a large bowl and the yolks in 6 separate small cups or bowls.
2- Beat egg whites and pepper using an electric mixer on high speed, until stiff peaks form. Using a rubber spatula, fold in cheese, ham and chives.
3- Spoon egg white mixture into 6 equal mounds on prepared pan, spacing them 3 inches (7.5 cm) apart. Using the back of the spoon, make a deep cavity in the center of each.
4- Bake in oven for 3 minutes. Remove pan from oven and carefully add 1 yolk to the center of each mound. Bake for 2 to 4 minutes or until yolks are just set. Serve immediately.
