Ham and Cheese Egg Puffs. Breakfast recipe.

Ham and Cheese Egg Puffs.

I have recently discovered a very interesting cookbook called 200 Best Sheet Pan Meals. I was amazed to find out how easy these recipes were to make. Not only does using sheet pans help you save time but they can also create crisp-tender textures and rich flavors.

Ham and Cheese Egg Puffs. 200 Best Sheet Pan Meals.

Once you get the 200 Best Sheet Pan Meals, you will have everything you need to know to get cooking. You will find in this book fun and inspiring recipes, including Pepper Jack and Black Bean Oven Quesadillas, Turkey Meatloaf  Minis with Skinny Fries, and Decadent Carrot Cake with Cream Cheese Frosting. I love that Camilla included a Sheet Pans 101 section and a long list of ingredients to prepare your own Sheet Pan Pantry. Ready to make delicious recipes that your whole family will enjoy? Let’s get started with this fabulous recipe, the Ham and Cheese Egg Puffs.

Ham and Cheese Egg Puffs

Makes 6 servings

Don’t be deceived by the short list of everyday ingredients — these egg puffs are something special.

Tip: It is easier to separate the whites from the yolks while eggs are cold. However, the whites will whip to greater volume if they are not super-cold, so consider letting the egg whites warm for 5 minutes at room temperature before beating.

Preheat oven to 450°F (230°C)

18- by 13-inch (45 by 33 cm) rimmed sheet pan, lined with foil and sprayed with nonstick cooking spray

6 large eggs

1⁄4 tsp, 1 mL freshly ground black pepper

1⁄2 cup, 125 mL grated Parmesan cheese

1⁄3 cup, 75 mL finely chopped cooked ham

1⁄4 cup, 60 mL chopped fresh chives

1- Separate the eggs, placing the whites in a large bowl and the yolks in 6 separate small cups or bowls.

2- Beat egg whites and pepper using an electric mixer on high speed, until stiff peaks form. Using a rubber spatula, fold in cheese, ham and chives.

3- Spoon egg white mixture into 6 equal mounds on prepared pan, spacing them 3 inches (7.5 cm) apart. Using the back of the spoon, make a deep cavity in the center of each.

4- Bake in oven for 3 minutes. Remove pan from oven and carefully add 1 yolk to the center of each mound. Bake for 2 to 4 minutes or until yolks are just set. Serve immediately.
