Healthy Breakfast Recipes: Easy Banana Muffins

Easy Banana Muffins

Yield: 24 Mini Muffins

Ingredients:

2 ripe bananas

½ cup brown sugar

1 egg

4 tablespoons unsweetened applesauce

1 teaspoon vanilla extract

1 cup oats

1 cup whole wheat flour

1 teaspoon cinnamon

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

Instructions:

  1. Preheat oven to 400 degrees and grease a mini muffin pan.
  2. Add bananas to a large mixing bowl and mash with whisk until smooth.
  3. Add brown sugar, egg, applesauce, and vanilla extract. Whisk until combined.
  4. Add oats, flour, cinnamon, baking powder, baking soda, and salt. Whisk until combined.
  5. Spoon batter into muffin pan and bake for 15 to 20 minutes, or until golden brown.
  6. Allow to cool completely before serving.
