Easy Banana Muffins
Yield: 24 Mini Muffins
Ingredients:
2 ripe bananas
½ cup brown sugar
1 egg
4 tablespoons unsweetened applesauce
1 teaspoon vanilla extract
1 cup oats
1 cup whole wheat flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
Instructions:
- Preheat oven to 400 degrees and grease a mini muffin pan.
- Add bananas to a large mixing bowl and mash with whisk until smooth.
- Add brown sugar, egg, applesauce, and vanilla extract. Whisk until combined.
- Add oats, flour, cinnamon, baking powder, baking soda, and salt. Whisk until combined.
- Spoon batter into muffin pan and bake for 15 to 20 minutes, or until golden brown.
- Allow to cool completely before serving.
