Planning breakfasts, lunches, snacks, and dinners is so important. Choosing healthy and nutritious foods like Canadian Turkey and Lentils ensure that every meal will be nutritious, tasty, budget-friendly, and easy to prepare.

Turkey will fuel your family with essential protein and nutrients. Each 100-gram serving provides about 30 grams of high quality lean protein. Turkey is also packed with nutrients like vitamin B12, selenium, and zinc.

Canadian lentils are another great choice for everyday meals.  They are a nutritional powerhouse. They are high in protein, fiber, and a great source of minerals like potassium, iron, and folate.

Hearty Turkey Lentil Breakfast Bowl

Hearty Turkey Lentil Breakfast Bowl

Serves: 4-6 people

Prep time: 15 mins.

Cook time: 30 mins.

 

Ingredients:

3 Canadian turkey sausages

2 cups (500 ml) cooked whole green lentils

1 tbsp (15 ml) olive oil

1 large onion, diced

1 medium sized butternut squash, cut into ½ inch cubes

1 large zucchini, cut into ¾ inch cubes

1 red pepper, diced

1 tsp (5 ml) garlic powder

1 tsp  (5ml) sweet paprika

Salt and pepper to taste

4 eggs

 

Instructions:

 

  1. Heat olive oil in a large frying pan.
  2. Remove sausage from casings.
  3. Add onions, sausage and squash to pan and cook through, 10 – 12 minutes. Break up sausage into chunks while cooking.
  4. Add zucchini, peppers, and lentils. Cook an additional 3 – 5 minutes until zucchini and peppers are browned and softened, and the lentils are warmed through.
  5. Add seasonings and salt and pepper to taste.
  6. To serve, top with fried eggs.

 

TIP: Batch-cook this dish (excluding eggs) up to 3 days ahead for a quick start to breakfast!  Turn it into a hearty lunch by serving with two hard-boiled eggs.  To cook whole green lentils, place ¾ cup dry lentils in a pot with 2 ¼ cups of water and boil for 20-25 minutes until tender and cooked through.  For an extra short-cut you can also use canned lentils too!
