Lemon Cheesecake Cupcakes
I could not resist to share this divine recipe from the 150 Best Cupcake Recipes cookbook. These precious miniature cheesecakes are not only cute, but they’re also amazingly tasty! Try this Lemon Cheesecake Cupcake recipe this weekend. Your whole family will love it!
Lemon Cheesecake Cupcakes (page 113)
Makes a dozen of yummy cupcakes
Preheat your oven to 350°F (180°C)
Lined Muffin pan
For the filling you will need:
1⁄4 cup, 60 ml sour cream
12 oz, cream cheese (package of 375 g)
1⁄2 cup, 125 ml sugar
2 eggs
1 tsp, 5 ml grated lemon zest
3⁄4 cup, 175 ml lemon curd, from the grocery or homemade.
Store-bought lemon curd is usually available in stores with the baking supplies or with the jams and jellies. You can also find a Lemon Curd recipe on page 165 of the same cookbook!
For the crust, you will need:
1 tbsp, 15 ml packed brown sugar
3⁄4 cup, 175 ml graham cracker
3 tbsp, 45 ml melted unsalted butter
Instructions
- Whisk brown sugar, graham crumbs, and melted butter together in a bowl. Press mixture into cups.
- In your food processor (metal blade preferably) start by pulsing cream cheese until it becomes smooth. Combine sugar and pulse it again. Add sour cream and also pulse until smooth. Combine zest and eggs, pulsing again.
- Fill the cups. Bake for about 18 -22 minutes. Let the cupcakes cool down in pan for about 10-12 minutes. Remove and place in the refrigerator for a minimum of 2 hours. Before serving, place a curd over each cupcake.

My grandaughter and I went to buy the lemon curd..$5. For a small jar. Decided to make our own. Was easy and tastes great. This recipe gets a 10 from us. To prevent the. Cupcakes feom falling , when the time was up, I left them in the oven to cool down for about 15 minutes. This way they cool slower. No problems and will definitely make again!

I enjoy cheese cake immensely and to think as a child I’d never eat it because of the name – cheese in cake = yucky or so I thought back then. I love the fact that these are smaller portions since I’m on my own and couldn’t possibly manage a whole cake on my own – well I probably could but I’d be sick afterwards LOL.

I made these and they are very, very tasty. It makes 12 regular size cupcakes. The only problem I had was as soon as I took them out of the oven to cool, they collapsed. They were sunken in. I’ve had that happen with a full size cheesecake also. I just don’t know why that happens.
