Brown Sugar Fudge
No matter how you want to call it -brown sugar fudge, penuche or sucre à la crème, it has been flowing in my veins since I was a baby. My great grandmother was making the most delicious brown sugar fudge of the village. I remember eating so much of it that my mouth would hurt from too much sugar.
In my family, there was only one way to make brown sugar fudge, and it was quite simple. Today, I am aware of more than 100 recipes that all have their own taste and cooking instructions. I have tried many of them over the years but I always go back to our original version, with a modern twist. In our home, brown sugar fudge should not be smooth. Surprised? Our recipe is creamy but has a subtle gritty texture.
Maybe this is where fudge gets its reputation for being difficult to make. In order to have the perfect texture, you need to obtain the right amount of sugar crystallization. If there is not enough crystallization, your fudge will be too liquid and if there is too much, it will be hard and gritty. I have messed up so many fudge recipes throughout the years that I know for a fact they can still taste good.
I could not tell you enough that the most important thing about brown sugar fudge is the texture. Try this recipe again, again, and again to get it exactly the way you like it. You will probably overcook a batch or undercook the next one. No matter what happen, don’t rely on a candy thermometer alone and don’t give up!
Prep time 20 minutes
Total time 1 hour
Portion size 50 pieces
Ingredients
1 cup brown sugar
1 cup white sugar
1 cup 35% cream
1 tablespoon of butter
Preparation
1. Line the bottom of a square pan with parchment paper or grease the bottom with butter.
2. In a microwave container, add the brown sugar, the white sugar, and the cream.
3. Cook in the microwave for 6 minutes.
4. Stir gently and cook for another 6 minutes.
5. Add the butter and beat with an electric mixer at high speed for about 2 minutes until the mixture becomes thicker.
6. Spread evenly in the pan and place in the refrigerator for 30 minutes.
7. Remove from the pan and cut into 1-inch squares.

For the stove top mode:
Combine the brown and white sugar in a bowl,
Use a medium sauce pan,
Put sugar mixture and cream with butter,
Mix on low heat, DO NOT let it get to a boiling point!
Stirring constantly with heat proof spatula till granules of sugar smooth with cream for about 7 mins depending on stove you use.
Remove from heat
Do not let sit on heat butter and sugar burns quickly as we all know 😉
Then add to your cake pan or which ever baking container you use 9×9 is prefered.

Omg I can’t believe how easy these are to make, I am going to have to give these a shot, if they don’t turn out can still eat them, it’s like my grandmothers potato candy I think she was the only person who could make it, I have tried so many times and it never turns out but we still nibble on the crumbs!!
