Catelli Foods Corporation is finally introducing a gluten free lasagne with better flavour and texture made from a delicious blend of four grains –– white rice, brown rice, corn and quinoa.  Catelli® Gluten Free Lasagne is the sixth cut of pasta to be featured in the Catelli® Gluten Free Pasta line, voted by consumers as a 2015 Best New Product Award winner. The line also includes Penne, Fusilli, Macaroni, Spaghetti, and recently-introduced Linguine. All the pasta are produced in a dedicated gluten free facility and are certified by the Canadian Celiac Association’s Gluten-Free Certification Program.

Veal and Eggplant Catelli® Gluten Free Lasagne

Classic lasagne gets a flavourful new twist with roasted red peppers, along with smoked paprika complimenting the eggplant. Servings: 8
Prep Time 15 minutes
Cook Time 1 hour
Total Time 1 hour 15 minutes

Ingredients

  • 2 eggplants about 2 lb/1 kg
  • 2 tbsp 30 mL olive oil
  • 1/4 tsp 1 mL each salt and freshly ground pepper
  • 12 Catelli® Gluten Free Lasagne noodles
  • 4 cups 1 L shredded mozzarella cheese
  • 1/4 cup 60 mL grated Parmesan cheese
  • 1/4 cup 60 mL chopped fresh parsley
  • Red Pepper Tomato Sauce:
  • 2 roasted red peppers peeled and chopped
  • 3 cups 750 mL tomato sauce
  • 1 1/2 lb 750 g ground veal
  • 1/4 tsp 1 mL each salt and freshly ground pepper
  • 1 tbsp 15 mL olive oil
  • 3/4 tsp 4 mL smoked paprika

Instructions

  1. Red Pepper Tomato Sauce: In food processor, purée red peppers with 1/2 cup (125 mL) warm water; add tomato sauce and purée until smooth.
  2. Season veal with salt and pepper. In large skillet, heat oil over medium heat; sauté veal for 6 to 8 minutes or until browned. Strain to remove fat; return veal to skillet. Add smoked paprika and tomato mixture; cook for 3 to 5 minutes.
  3. Lasagne: Cut eggplants into 1/4-inch (5 mm) thick rounds. Brush both sides with olive oil; sprinkle with salt and pepper. Place on baking sheet; broil for 3 or 4 minutes per side or until browned.
  4. Spread 1 cup (250 mL) of Red Pepper Tomato Sauce in bottom of greased 13- x 9-inch (3.5 L) baking dish. Place 4 pieces of uncooked noodles over top. Spread with 1 1/2 cups (375 mL) of sauce; place half of the eggplant slices over top. Sprinkle with one-third of the cheese; repeat layers once. Top with remaining noodles, sauce and cheese.
  5. Cover with foil; bake in 375°F (190°C) oven for 30 minutes. Remove foil; bake, uncovered, for 10 minutes longer. Sprinkle with parsley. Let stand for 10 minutes.

    Not strictly, but I like to have some on hand because one of my best friends is gluten free. I try to have some gluten free pasta and gluten free flour on hand so I can make gluten free meals for our pot luck gatherings. She’s Gluten free, another bestie is Vegan and I’m vegetarian. We’re a cute bunch to feed haha

    I don’t serve gluten free pasta to my family on a regular basis but do when my sister and her family comes over as my nephew has celiac disease. Spaghetti is our go to favourite.

    We don’t eat gluten free pasta regularly, but we do serve it when we need to with guests. It tastes just as good and you really can’t tell the difference. I love penne noodles regardless of the dish.

    I’ve not tried gluten free pasta yet. My grandson was once thought to be allergic to gluten but thankfully that didn’t prove to be the case. We like all sorts of pasta, I don’t think there’s one we don’t like 🙂

    I have not tried Gluten Free Pasta. Last time I went to a family potluck I found out one of my nephew’s wives has to have gluten free foods so next time I go to a family function I will keep this in mind so she has more choices in what she can eat. I always like Rotini pasta as it is nice in different dishes like soups, salads and casseroles.

    We eat gluten free pasta all the time we are at a toss up on our faves we like barilla and catelli equally these brands are much better than any other organic gluten free rice pasta and certainly changed how we eat pasta their quality doesn’t even compare and I love how they just recently came out with the linguni and lasagna noodle I hope they continue to come out with more exciting kinds of pasta maybe bowtie next 😉

    No, I haven’t made or eaten gluten free lasagne before. I would like to try though to see what the difference between gluten and non-gluten taste like. I like the end piece of lasagne’s, where the cheese is just a bit seared by the side of the pan.
