Spring Cupcakes with Homemade Frosting Recipe

When I think of spring, I think of beautiful weather, pastel colors, and Easter. I also think about fun family traditions, and spending time with family and friends. That is exactly what inspired this recipe. The pastel colors of the cupcakes, and the frosting, instantly make me think of spring.

Spring Cupcakes with Homemade Frosting Recipe

Adding different gelatin flavors to the cupcakes and frosting, make it easy to create these beautiful pastel colors. These colors also make for beautiful frosting, to add atop the cupcakes. I wanted to make a recipe that was easy to make, but also fun to eat. Try experimenting with different flavors and colors to make unique looking Spring Cupcakes. These will make a great treat this spring, or a fun Easter dessert. Enjoy, and let me know what you think of them in the comments below.

Spring Cupcakes with Homemade Frosting Recipe

Ingredients

1 box white cake mix
3 boxes gelatin (1 green, 1 pink, 1 yellow)
1 very ripe banana
1/2 cup applesauce
1 egg
A large box of instant vanilla pudding
1 1/2 cup milk
1 1/4 cup water
18 oz heavy whipping cream

Direction

1. Preheat oven to 350 degrees F.
2. Mash the banana in a large bowl, add the applesauce.
3. Add the cake mix, egg, and water.
4. Mix well.
5. Split batter into 3 portions in separate bowls.
6. Add 3 tablespoons of one color of gelatin to each bowl. (Example: Yellow in one, green in another, pink in the third)
7. Mix the batter and gelatin until batter is colored.
8. Prep muffin tin with cupcake liners.
9. Poor batter into cupcake liners about 3/4 full.
10. Bake the cupcakes for 18-20 minutes. Makes 2 dozen cupcakes

While cupcakes are baking, prepare the frosting.

1. In a bowl, add milk to the instant pudding mix.
2. Mix well until there are few to no lumps.
3. In a separate bowl, pour in whipping cream.
4. Mix whipping cream with a hand or stand mixer until peaks form.
5. Gently fold the whipped cream into the vanilla pudding.
6. Separate the pudding mixture into 3 separate bowls.
7. Add 3 tablespoons of one color of gelatin to each bowl of pudding mixture.
8. Mix gently until blended well.
9. Add additional gelatin until color is desired. (Note: adding pink gelatin to vanilla pudding will result in a more orange color than pink)
10. Wait until cupcakes have cooled to add the frosting.
11. Refrigerate frosted cupcakes.
